I always just figured he said "I'm going to eat you, Eli. I'm going to eat you up." Because at the end of the movie he's yelling "I told you I would eat you, boy! I told you I would eat you up!" and I don't recall ever hearing him say he was going to eat him during the movie.
In any case, I've been using that as a blind threat. "Oh you won't cash my check at this bank? I'm going to eat you. I'm going to eat you up."

I agree that it's something along the lines of, "I'm going to eat you up."
When DP was dragging Eli through the mud, he promises him, "I'm gonna bury you underground, boy." The baptism scene was the ideal time for a little "refresher", and I'll bet he reiterates his threat by telling Eli he will be eaten up. The looks of smug satisfaction on DP's face (and abject terror on Eli's) are priceless.
On a side note, I thought PTA's use of a fraudulent preacher as a God-proxy was very interesting. Discuss...
kokakola, he whispers "that's a pipeline" shortly after being "washed in the blood of lamb".....that's pretty audible. how they mistook that with the piece of dialogue we don't hear is anyone's guess. but there's that.
i definitely think it's "i'm going to eat you" or something to that effect, because there's no other way to explain the "i TOLD YOU i was going to eat you up!" except for pure plainview insanity.

I agree with the "I'm going to eat you" theory, simply because it makes perfect sense.
I feel like entirely too much emphasis is being placed on us not hearing what DP is saying to Eli. Eli already has a "taken aback" look before DP shakes his hand and tells him the unheard piece of dialogue;that look does not come after whatever it is that DP tells him, and so cannot be a response to it. So, as to why Eli looks that way, either it's a theatric affectation for his congergation, or he heard DP say "there's the pipeline" and is on to the cynicism with which DP is accepting the baptism...
I know that everyone in the theater laughed when DP shakes Eli's hand and says whatever he says. And for being on to DP's cynicism, I think Eli's on to it the minute DP walks into the church. They NEVER trust one another, not for one minute.
